A simple and tasty bento idea made with pan-fried egg tofu and seasoned minced meat. Perfect for toddlers and busy mums looking for quick lunchbox wins!
Ingredients
- 100g minced pork or chicken
- 1 tube of egg tofu (about 120g), sliced into 1cm rounds
- 1/4 tsp mushroom powder
- 1/4 tsp garlic powder
- 1 tsp oil (for frying)
- Optional: chopped spring onions for garnish
Directions
- Slice the egg tofu into 1cm rounds. Pan-fry in a non-stick pan over medium heat with a little oil until both sides are golden. Set aside.
- In the same pan, add minced meat and cook until no longer pink.
- Season with mushroom powder and garlic powder, and stir-fry until fully cooked and slightly browned.
- Let everything cool slightly before packing into a bento box with rice and vegetables of choice (like corn, broccoli, or cherry tomatoes).
Notes
Make a larger batch of minced meat, portion it into ice cube trays, and freeze. Simply thaw and reheat when needed.
